Peachy Breakfast Cake

I really look forward to a slower start to the day on the weekends.  I’m usually not in a big rush and my house has a more relaxed feel when I wake up on Saturday mornings.  I like to sit on the front porch, sipping coffee and getting a little quiet time in with my husband before my children wake up.  Along with my coffee, I like to splurge and have something a little sweet for breakfast on the weekends.  This cake is not too sweet, but just perfect with that morning cup of Joe.  This Peachy Breakfast Cake is a mouth watering, moist cake, that has a delicate hint of cinnamon along with warm peaches in every bite.  You can make this right in your cast iron skillet (my favorite) or you can use a regular baking dish if you like.  This cake also freezes really well, so sometimes I like to double the recipe and make 2.   I love having an extra cake in the freezer that I can pull out for unexpected guests or a busy weekend.  So take a little time during the week, if you have off or on the weekend to enjoy a cup of coffee, some breakfast cake and some quiet time with a loved one.  It’s a great way to start to the day:)

  • 1/8 tsp. nutmeg

  • 1 egg
  • 1/2 cup buttermilk

  4. In a Kitchen Aid Mixer, cream the butte with the sugars.
  5. Add the cinnamon, nutmeg, egg and vanilla and mix together.
  6. Alternate adding some of the dry mixture, then some buttermilk; mixing lightly after each addition.
  7. Pour the batter into your lined cast iron skillet and arrange your peaches on top.
  8. Sprinkle with raw sugar.
  9. Bake for 25-30 minutes or until a toothpick inserted into the cake comes out clean.
